OKDF394B Special Release Pinot X Bourbon Single Malt Whisky 57.5% 500ml

This release has been on a journey to get to this point. Originally matured in a series of small 20L Tasmanian Pinor Noir casks, this whisky was then finished in firstly a 120L Tasmanian Pinot Noir cask before then undergoing a second period of finishing in a 120L Bourbon Cask. This varied maturation was undertaken to capture different elements from each maturation and combine them in a single whisky.

The primary maturation in 20L Pinot Noir casks produced an intensely fruity and vibrant whisky with plenty of blackcurrant and strawberry. The time in the larger Pinot Noir cask has allowed for the development of more subtle French Oak characteristics such as cedar wood and spice. Finally, the time in the American Oak Bourbon cask has brought a sweet vanilla and rolling tobacco element to the final whisky.

The layering of cask influence has produced a rich and complex whisky that changes and develops with time and warmth in the glass.
